Pork Chops and Scalloped Potatoes

Serves 8

8 pork chops, browned and drained
1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 Tablespoons vegetable oil
8 cups potatoes, thinly sliced
2 cups onions, thinly sliced
6 Tablespoons flour
1/2 teaspoon pepper
1 teaspoons salt
3 cups milk

Preheat oven to 350 degrees.

Dredge pork chops in flour mixture of 1/2 cup flour and salt and pepper. Brown in 2 Tablespoons of oil in a hot frying pan. You do not cook the meat, you just brown it.

Peel and slice the  potatoes and onions.  Arrange 1/2 potatoes and onions in a greased casserole dish.  Sprinkle with 3 Tablespoons flour (I use the flour left over from the dredging), 1/2 teaspoon salt and 1/4 teaspoon pepper.  Repeat.  Top with browned pork chops or butter.

Bake at 350 degrees for about an hour, or at 325 for 2 hours.

This wonderful served with applesauce and green beans with melted cheese whiz.
I always make enough potatoes to add to my taco meat for the next night!
