This chicken marinade is wonderful. I like to serve is with asni de pepe salad (frog eye salad). It is a very healthy marinade since it has no oil in it.
1/2 cup soy sauce
2 1/2 cups pineapple juice
1/4 cup wine vinegar
1/3 cup sugar1 teaspoon garlic powder
Mix ingredients. Marinade chicken in mixture for 24 hours.
Broil on outside grill or the broiler in your oven. During the last couple of minutes, you may broil pineapple 1 ring on top of the chicken.
Serve over bed of wild rice (optional)
