Baked Caramel Corn

8 quarts popcorn, popped
3/4 cup brown sugar
3/4 cup sugar
3/4 cup butter
1/3 cup corn syrup, heaping
1/4 tsp.  salt
1/4 tsp. vanilla

1. Preheat oven to 300 degrees F(150 degrees C).

2. Pop the corn (air-popped, over oil, or microwave).  Remove any remaining kernels.

3. Mix sugar, butter, corn syrup, and salt into a large saucepan. Cook over medium heat, stirring until mixture starts to boil. Continue cooking for 5 minutes without stirring.

4. Remove from heat. Stir in vanilla. Pour over the popped popcorn. Bake for 10-15 minutes in the preheated oven, stir and return to oven for 10 minutes. Remove from pan and put into a large bowl.  Break into pieces and cool.
