Zucchini Bread - Eve

This bread recipe makes a wonderful cake with cream cheese frosting on it.
2 cups zucchini, grated
3 eggs
1 cup oil
3 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 tsp. vanilla
2 cups sugar
3 cups flour

Mix together all ingredients.  Bake at 375 for 20 minutes on a cookie sheet or for 1 hour in a loaf pan.
