1 cups flour
3 egg yolks
1 egg
2 teaspoons salt
1/4-1/2 cup water
Measure flour into bowl; make a well in the center and add egg yolks, whole egg, and salt.
Mix well with hands.
Add water, 1 tablespoon at a time, mix thoroughly after each addition (add only enough water to form dough into a ball.)
Turn dough onto well-floured board; knead until smooth and elastic, about 10 minutes. Cover; let rest for 10 minutes.
Divide dough into 4 equal parts. Roll 1 section of dough, into a paper-thin rectangle, keeping the remaining dough covered.
Cut dough into narrow noodles.
If you have time let the strips dry on a bowl (about 2 hours). If not they still will work.
Cook in boiling salted water or broth. Cook for 12-15 minutes or until tender. Drain thoroughly.
