Carne Asada

This is my favorite recipe I found while doing Whole 30. It is a yummy marinaded steak, sliced into strips and covered in an avocado salsa. The marinade by itself is delicious, but the sauce makes it amazing!! I usually serve with steamed broccoli and fresh pineapple on the side.

1-2 large steaks (I like sirloin or London broil)
1/3 cup white vinegar
1/3 cup olive oil (or whatever oil you like)
1/3 cup apple juice
2 juiced limes (I usually just do a couple good squirts of bottled lime juice)
4 cloves of garlic, minced
1 tsp. salt
1 tsp. pepper
1 tsp. chili powder
1 tsp garlic powder
1/2 tsp cumin
1 tsp dried oregano

Mix the white vinegar, olive oil, apple juice, lime juice, garlic and spices together. Pour over the steak in a gallon ziplock bag, coat, and marinate in the fridge overnight. Broil or grill to desired temperature. Slice into strips and serve with tomato-avocado salsa on top. I love to use the left over salsa as a salad dressing. So yummy!!!

Tomato Avocado salsa:

2 medium tomatoes
1 ripe avocado
1 jalapeño, seeds removed
1 small onion, chopped and sautéed
1 lime, juiced (I use bottled lime juice)
1/2 tsp. garlic powder
1/2 tsp. salt

Place all ingredients in a strong blender or food processor and mix until smooth.
