Bajio Chicken Chile Salad

I personally like this chicken better than the Café Rio Chicken.  It has so much more flavor.  You can serve it in tortillas or on top of romaine lettuce as a salad. 

Green Chili Chicken

5 chicken breasts (or 4 large ones)
1/2 cup salsa
1 Tbsp. cumin
1/2 cup brown sugar (more to taste)
1 4 oz. can diced green chilies
6 oz. Sprite (1/2 can)

Directions:
Combine all ingredients in a crock pot.
Cook on low for 5-6 hours.
Remove chicken and shred.
Return to crock pot and cook 1 more hour.
Thicken the juices with a little cornstarch mixed in water.

Serve with flour tortillas, lettuce, cheese, black beans, sweet rice  and mango salsa and cilantro lime dressing .  All these toppings are options.  The sauce on the chicken is good enough that you really don't need dressing.

If you want it spicier rather than sweeter add a hotter salsa and more green chilies.

Bajio" Sweet Rice

 Approximate Time: 50 minutes with prep and cook time.

1/2-1 tablespoon vegetable oil
1/2 of a white onion, chopped (add more or less to your taste)
1/2 bunch fresh cilantro
1 1/3 cups white rice
3 cups chicken broth
1/4-1/2 cup white sugar
 
Directions:
Put a little oil in bottom of pan (maybe about 1/2-1 tablespoon).
Sauté chopped onion until translucent. Add the chopped cilantro (no big stems) and sauté a minute more. Add the rice, cooking until it is light brown (being careful not to burn).
Combine the chicken broth and sugar, letting sugar dissolve. Then stir into rice until combined. Bring to a boil. Cover and let cook on low, med-low until rice is done, about 25-30 minutes. Fluff with a fork before serving.
 

Absolute Best Mango Salsa

2 cups mangoes medium chopped
1 cup red bell pepper, chopped
2/3 cup green onion, chopped
2 Tbsp. fresh lime juice
4 tsp. olive oil
1 medium fresh jalapeno, minced
1 cup chopped pineapple tidbit

Directions:
Mix ingredients together in large bowl.
Add jalapeno to taste (I usually use about 3/4 of a medium-sized jalapeno, which gives it quite a kick!).
Refrigerate for at least 30 minutes to an hour to allow flavors to mellow.
Immediately before serving, give salsa a quick stir. May be stored in a sealed container for several days.

 Cilantro Lime Dressing

1 pkg. Hidden Valley Ranch Dressing (dry mix)
1 cup buttermilk
1/2- 1/3 bunch of cilantro, chopped
1/2 - 1 small jalapeno (remove seed)
1 cup mayo
1 tsp. lime juice
1-2 tomatillos (remove outer papery skin)
1 garlic clove
 
Blend all ingredients in blender
