Ice Cream Sandwiches

These ice-cream sandwiches are the cake of choice for my birthday. Though a good German cake can make my taste buds smile.

Serves 12

3 1/2 cups Rice Krispies, toasted
1 cup coconut, toasted
1 cup brown sugar, firmly packed
1/2 cup butter, melted
1/3 cup walnuts, chopped, or pecans
1/2 gallon vanilla ice cream, softened

Toast the cereal and coconut under your oven broiler. Watch the cereal and coconut constantly because it toasts quickly and can burn. When it gets toasty brown, stir it and repeat until the mixture is toasted throughout the mixture.   Combine with brown sugar, butter and nuts (optional).  Mix well.  Spread 1/2 the cereal mixture on bottom of 9x13 inch pan.  Spread the ice-cream onto the rice cereal (I like to slice the ice-cream in to about 1 inch slices; it makes it easier to place).  Cover with the remaining cereal mixture.  Freeze until firm.  Cut into serving squares.
