Kidney Cowboy Caviar
Based on 6 servings per recipe.
2 cups fresh or frozen corn, cooked and cooled
1 can low sodium Black Beans rinced and drained
1 can low sodium Pinto Beans rinced and drained
1/2 cup red bell pepper, diced
1 jalapeƱo, seeded and diced
1/2 cup cilantro, chopped
1/4 cup lime juice
1/2 cup olive or canola oil
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1/2 teaspoon black pepper
Preparation
Preparecorn, let cool.
To make the dressing whisk lime juice, oil, brown sugar, mustard, and black pepper together.
In a large bowl combine all other ingredients.
Pour dressing over salad and stir.
Chill for one hour in refrigerator.
