Spudnuts

This is a treat Grandma would make around Halloween. I remember going sleigh riding in the winter and coming home to these wonderful spudnuts . She had every topping you can imagine, frosting, coconut, nuts, sprinkles etc. on the table so we could make our own custom spudnuts.
  

4 cups milk
1 cup butter
1 cup sugar
1 cup mashed potatoes
1 tsp. salt
3 yeast cakes (2 1/2 Tbsps. dry or instant yeast
1 tsp. baking powder
1 tsp. baking soda
4 eggs
1 tsp. vanilla
12 cups flour

Scald the milk and add the sugar, butter, 1 cup mashed potatoes and salt. Mix well. Dissolve yeast in 1 cup warm water.  Add yeast to the milk mixture.  Add baking powder and soda. Let rise 30 minutes. Add beaten eggs, and vanilla. Then add l2 C. flour to milk mixture. Let rise again. Roll out and cut with a donut cutter. Let rise again until it doubles (about 30 minutes).

In a hot fryer or deep fry pan heat shortening or canola oil to 375 degrees F (190 degrees C). Carefully place 2 to 3 doughnuts in pan. Turn when lightly golden. Lift out when done and drain on paper towels. Glaze or roll in sugar.

Glaze:
1 pound powdered sugar
1/4 cup boiling water
1 Tbsp. butter
1 tsp. vanilla
