Enchilada Casserole

2 cans mild/medium enchilada sauce (I use Old El Paso)
1 pound ground beef
1/2 onion
1-2 cups cheese
corn or flour tortillas (I use corn)

Spray 9x13 inch pan with non-stick spray.
Chop up onion
Brown ground beef. Add onions and soften in the ground beef.
(If you like green chili's you can add a can of them or a can of Ro-tel into the meat mixture to add some extra flavor).
Drain meat mixture.
Spread one can of enchilada sauce in the bottom of the pan.
Rip or cut tortillas into 1/4 size pieces. (I use my pizza cutter to do this). Layout the tortillas onto the pan and cover the entire bottom of the dish.
Spread the ground beef mixture over the tortillas.
Cover the meat with tortillas.
Spread another can of enchilada sauce over the tortillas.
Top with cheese. (Sometimes I like to add olives to garnish).

Bake at 350 degrees for 20-30 minutes.
Serve with lettuce and sour cream.
