Stephen's favorite cake is Carrot cake and so I have tried out a few recipes and this one is DELICIOUS! This was given to me by my friend Sarah.
2 cups flour
2 cups sugar
2 tsp baking powder
1 1/2 tsp baking soda
4 large eggs
2 cups grated carrots
8 1/2 oz can of crushed pineapple, drained
1 tsp salt
2 tsp cinnamon
1 1/2 cup oil
Mix together dry ingredients, set aside Cream sugar and eggs. Add oil and mix. Add flour mixture and mix. Add carrots and pinapple and optional nuts.
Bake at 350 for 35-50 minutes or until done. let cool.
Frosting:
Cream
1/2 cup margarine
8 oz package cream cheese
2 tsp vanilla.
Beat in 1 pound powdered sugar.
