Chocolate Dipped Strawberries

16 large strawberries
1/3 cup semi-sweet chocolate chips
1/2 tbsp.canola oil
or
Dipping Chocolate - dipping chocolate has the oil already in the chocolate.

1.  Wash berries, leaving caps and stems intact.  Do not use bruised or nicked berries.  Gently pat the berries with a paper towel until they are completely dry

2. Melt the chocolate chips and oil in a small double boiler over simmering water stirring constantly, or melt at 30% power in microwave - melt for 1 minute,then take out and stir - repeat until completely melted and smooth. Remove from heat.

3. Hold the strawberry by the stem or cap, dip them about 3/2 of the way into the chocolate, drip the excess chocolate back into the bowl or pan.  Place berries on wax paper to set.  This will take about 2 hours. Do not put in fridge to speed up the chocolate setting process.  If you store in the fridge it will ruin the strawberry. The fruit turns off colored and the chocolate sweats and gets drops of liquid on the surface of the berries.

4. Eat the strawberries soon, since they will go bad quite quickly.
