Choco-mallo Cookies and Cake Mix Cookies

These are so good.  Emily makes them with the cake mix cookie recipe (below).  I like the original best, but in a hurry the cake mix cookies are great.  You can make any kind of cookies with the cake mix recipe.  You can add chocolate chips, m&m's, put cream cheese frosting in the middle and make homemade Oreo's.  The possibilities are endless.

Cookie Ingredients
1/2 cup shortening
1 cup sugar
1 egg
1 teaspoon vanilla
1/3 cup milk
1 2/3 cup all-purpose flour
1/2 cup cocoa
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
18 large marshmallows cut in half.
1. Preheat oven to 375 degrees. Cut marshmallows in half.
2. Cream shortening and sugar; beat in egg, vanilla and milk.
3. Sift together dry ingredients, then stir into creamed mixture.
4. Drop by teaspoonful's onto greased cookie sheet.
5. Bake for 8 minutes. Remove from oven and press 1/2 marshmallow into the center of each cookie. Return to oven for 2 minutes, Remove from oven and cool.
6. Frost with cocoa frosting.

Cake Mix Cookies
Hands-On Time: 10 minutes
Total Time: 21 minutes
Servings: 24  (using a small medium cookie scoop)

Ingredients
1 box chocolate cake mix (or any flavor)
2 eggs
1/2 cup shortening

Baking Instructions
Add 1/2 cup shortening and two eggs to one box of cake mix. Add chips, nuts, and flavorings if desired. Drop by teaspoonful's on a cookie sheet.
Bake at 350 degrees for 10-12 minutes.  ( I do 9 minutes and then add the marshmallows for 2 minutes)

Chocolate Frosting
1/4 cup butter, melted
1/2 cup cocoa
1/4 tsp. salt
/3 cup milk (approx)
3 1/2-4 cups powdered sugar

Om saucepan, melt butter.  Remove from heat and add cocoa and salt.  Stir in milk and vanilla.  Add this mixture to the sugar in a mixing bowl.  Mix or beat until smooth and the spreading consistency is how you like it.
